I really enjoyed this one. Over the last year, I’ve been learning to make pasta, butter, use dry versus canned beans, squeeze my own lemonade, make pie crust. The dirty little secret: none of it is very hard. I had a Eureka moment recently: there was a commercial on TV where a mom and a kid were “baking” together for Christmas. Nice Christmas music in the background, mother-daughter bonding, really playing at your heartstrings. What were they baking? They were removing pre-molded cookie dough rounds from the packaging and placing them on the baking pan. Making cookies from scratch takes a half an hour, tops. Sigh.

That cookie ad sounds like a grim metaphor for all the ways we go wrong with food nowadays. As you say, making things from scratch is often not very hard at all. And it’s usually cheaper and always more delicious than the processed alternative.
Pasta is a perfect example. You can’t beat homemade ravioli. Or even just homemade spaghetti.
Last year we picked apples on holiday in Somerset and made chutney. We opened the final jar last week and it’s ambrosia, the perfect companion to a strong English cheddar. And every mouthful reminds us of the holiday.
